4 cup milk
1 cup sugar
2 eggs, separated
1 1/2 cup saltine crackers, crumbled
1 cup coconut
1 tsp vanilla

Directions:
Directions:
Add crumbled crackers, sugar and slightly beaten egg yolks to milk in a saucepan. Cook over medium heat until it thickens, stirring constantly. Remove from heat and add coconut.
 

Meringue

2 egg whites
3 tbsp sugar
1 tsp cornstarch

Directions:
Directions:
Pour into baking dish. Mixture will thicken as it cools. Top with meringue and sprinkle with coconut.

Bake at 375 degrees for 8-10 minutes or until slightly brown.
