Marinated BBQ Chicken Recipe

Ingredients: Chicken breasts or other parts Balsamic vinegar Garlic, choped or sliced Oregano, basil, thyme (or an already prepared Italian seasoning mix) Olive oil (just a little)

Directions:Put chicken breasts in some sort of pan to marinate. Pour balsamic vinegar. How much? I dunno. I never measure anything, but be generous. Add garlic, Italian herb blend and just a little olive oil (too much oil will drip off and cause the flames to flare up and burn chicken). Marinate from 30 minute to overnight! Grill over low to medium heat. It will probably take around 20 minutes, but keep an eye on it. If you just leave it there for an entire 20 minutes, you'll come back to burnt chicken. Turn the chicken over a number of times. You'll probably want to move the pieces around a bit, if your grill has hot spots. If you need to, it's OK to butterfly the breasts toward the end. If you marinated the chicken in a metal pan and there's room, put that pan on the grill next to, but not over the flames. The marinade will become a sort of sauce. If you used a plastic dish to marinate, do not put the cooked chicken back in it. You want to avoid the risk of contaminating the cooked chicken with raw chicken juices. Serve it over a salad or as is. |
