3 lbs, potatoes, cubed
½ cup butter
2 3oz packages cream cheese, softened
1 cup shredded cheddar cheese
2oz jar pimento, drained
1 small green pepper, finely chopped
1 bunch green onions, finely chopped
½ cup grated Parmesan cheese
¼ cup milk
1 tsp salt

Directions:
Directions:
Cook potatoes in boiling water to cover until tender. Drain and mash. Add butter and cream cheese. Beat at medium speed with an electric mixer until smooth. Stir in half cup of cheddar cheese and the next six ingredients. Screwed into a lightly greased 11 x 17 x 1 1/2“ baking dish.

CAN BE MADE AHEAD! Cover and chill for up to 48 hours if desired.

Remove from refrigerator and let stand at room temperature for 30 minutes. Bake at 350° for 40 minutes or until thoroughly heated. Sprinkle with remaining cheese and bake five more minutes until cheese melts.
