Ingredients: 1 Single Deep Dish Pie Crust ¾ Cup Mozzarella Cheese Divided ½ Cup Cheddar Cheese Divided 3 Large Tomatoes 1 Tsp. Salt ½ Tsp. Garlic Powder ½ Tsp. Oregano ⅓ Cup Fresh Basil Leaves ¼ Cup Mayonnaise 1 Cup Grape Tomatoes Halved Black Pepper

Directions:Preheat oven to 450º.
Peel tomatoes. Quickest method, boil water and drop tomatoes in boiling water for no longer than one minute. Pull out with slotted spoon. Skins should peel right off. Once peeled slice into ¼ inch thick slices.
Lightly salt tomato slices and spread over a double layer of paper towels to dry.
Poke pie crust with fork. Sprinkle ¼ cup mozzarella cheese on the bottom and bake for 10 minutes until lightly browned. Cool completely.
Combine ¼ cup cheddar cheese and ¼ cup mozzarella cheese in a small bowl.
Sprinkle tomato slices with garlic powder, oregano and black pepper to taste. Layer half of the tomato slices, then half of the cheese mixture and half of the basil. Repeat layers. Top with halved grape tomatoes (optional).
In a small bowl combine remaining ¼ cup cheddar cheese, ½ cup mozzarella cheese and ¼ cup mayonnaise. Spread over your top layer.
Reduce heat to 350º and bake uncovered for 30-35 minutes. Cool before serving (optional). |
