1 lb pork cutlets
1 tbsp vegetable oil
1 medium onion, sliced
1 can tomato sauce (7½ oz/213 mL)
½ c water or dry white wine
½ tsp basil
½ tsp salt
½ c grated Mozzarella cheese
pinch of thyme

Directions:
Directions:
Pound pork cutlets to an even thickness of ½ in. Pat dry with paper towels. Heat oil in large frypan, brown cutlets on each side until golden. Add onion slices and cook for 1 minute. Combine tomato sauce, water, basil, salt and thyme and pour over cutlets. Cover and simmer over low heat 30 minutes. Sprinkle Mozzarella over cutlets, recover and heat until cheese melts. Serve with noodles and crisp salad.
