Pitted Fruit - 3 c
Large Eggs - 3
Milk or Cream - ¾ c
Salt - 1/4 tsp
Melted Butter - 2 T
Vanilla Extract - 1 tsp
Almond Extract - ¼ tsp
Rum Extract - ¼ tsp
Sugar - ½ c
All-Purpose Flour - ¾ c
Confectioner's Sugar - To Garnish

Directions:
Directions:
1. Preheat Oven to 350 ºF.
2. Grease a 9"x2" round cake pan or a 9" pie pan what at least 1½" deep.
3. Place fruit in the pan, facing down if sliced.
4. Whisk together egg, milk, salt, melted butter, sugar, vanilla, almond, and rum extracts
5. Whisk in flour until most clumps are gone.
6. Pour batter into over the fruit.
7. Bake for 45 minutes, be sure to test using a toothpick or knife
8. Let it cool for 20 minutes
9. Remove and serve in thin wedges, sift powdered sugar on top. Whipped cream and extra fruit also make for good garnishes.
