Pretzels (water bath method) Recipe

1 cup water
1 cup flour
2 Tbsp. soft butter
1 pkg dry yeast
1 Tbsp sugar

Soften yeast and stir in other ingredients.
Beat for 3 minutes.
Add 1 cups flour.
Knead until dough loses stickiness.
Let rise in covered glass bowl until doubled in bulk.
Punch down. Divide into 12 pieces.
Roll into 18" lengths and loop into pretzel shapes.
Let rise until doupled.
Have ready a boiling solution of:
4 cups water and 5 Tbsp baking soda
Lower pretzels into the solution for 1 minute or until they float
Return to WELL greased cookie sheet.
Sprinkle with coarse salt
Bake at 475 until crispy brown, about 10-12 minutes

Have never tried this recipe but was one of two given us by Bill's college friend. The other recipe we use all the time.
