2 Lbs. Potatoes Peeled and Diced
7 Hard Boiled Eggs Chopped
1 Cup Mayonnaise
1 Tsp. Yellow Mustard
4 Tbsp. Sweet Pickle Relish
Salt and Pepper to Taste

Optional
Chopped White Onion
Chopped Celery

Directions:
Directions:
Place eggs in a pan covered with cold water. When water starts to boil, reduce to low and simmer uncovered for 1 minute.

Remove from heat and COVER and let stand for 20 minutes.

Peel and dice potatoes into about 1 inch pieces.

Cover with water and bring to boil for about 15 minutes or until tender. Drain in a colander.

Let potatoes cool before mixing so they wont crumble. You can put them in a bowl in the refrigerator for about 1 hour prior to mixing.

In a separate bowl mix the other ingredients together.

Add potatoes and mix gently.

Note: Chopped white onion and celery add a lot of flavor and a nice crunch!
