3 cups thinly sliced unpeeled zucchini (4 small)
1 cup Bisquick mix
½ cup finely chopped onion
½ cup grated Parmesan cheese
2 Tsp chopped fresh parsley
½ tsp salt
½ tsp Penzey’s pasta seasoning
½ Tsp dried oregano
⅛ tsp ground pepper
1 garlic clove, pressed or finely diced
½ cup vegetable oil
4 eggs, slightly beaten

Directions:

Heat oven to 350º.

Stir together all ingredients and spread in baking pan. Bake about 25 minutes or until golden brown. Cut into 2 inch squares and then across into triangles. Serve hot or at room temperature.
