2 (10 inch) or 3 (7 inch ) pie pans
2 cups mashed and sieved sweet potatoes (approximately 3 potatoes)
1 cup sugar
½ tsp cinnamon
½ tsp salt
3 small or medium eggs, separated
2 tsps vanilla
⅔ cup butter, melted
1 ⅔ cups milk, room temperature

Directions:

Preheat oven to 350ºF.

In a mixing bowl combine the sieved sweet potatoes, sugar, cinnamon, salt, beaten yolks, vanilla, and melted butter. Mix thoroughly. Add in the milk and stir well. Beat the whites of eggs to the frothy stage and stir them into the batter. Pour the batter into the pastry-lined pie pans.

Bake for 40 to 45 minutes.

This took longer than the recommended time but was worth the wait. I'd never eaten sweet potato pie until I went to Luby's in El Paso with some neighbors. Luby's is cafeteria style, and I selected what I thought was pumpkin pie. What a lucky mistake for me. This is every bit as good as pumpkin pie.

Oh by the way, you've never really had the Texas experience if you haven't been to Luby's!
