4 oz bacon, cut into bite sizes
1/2 med onion, diced
5 cups potatoes, cubed
1/2 tsp salt
1/2 tsp pepper
4 cups chicken broth
1/2 cup sour cream or top the tater
1 cup shredded sharp cheddar cheese
2 T chives, fresh is better
1/4 fat free half n half

Directions:
Select saute function to heat liner pot. Add bacon pieces and saute until crisp. Turn off saute function. Remove bacon from liner. Drain grease from liner.

Add onion, potatoes, salt, pepper, bacon and chicken broth. Secure lid, turn valve to sealing position. Pressure cook 6 minutes on high. Allow 10 minutes of natural release, then move valve to release the rest of the pressure.

When all the pressure is released, carefully remove the lid, add the sour cream and stir well. Add the cheese stirring until it is melted and fully incorporated. Add the half n half and the chive.

Serves 4.
