10 lbs of Potatoes
6 hard boiled eggs
1 jar diced pimentos
3 or 4 small chopped sweet pickles
1 can black olives
Dry or Fresh Parsley
Mayonaise 3/4 cup or to taste
Mustard (about 1 tablespoon)
3 stalks chopped celery
Salt and Pepper to taste

Directions:

Peel potatoes and cut into cubes. Boil for 10 minutes or until soft but not mushy. Add mayo and mustard and stir until creamy. Toss in other ingredients. Chop up eggs (reserving one to slice for the top) and add to mixture. Sprinkle with a dusting of paprika and chill for a couple of hours.

When Nina found out I was making this cookbook for all of you she insisted that this recipe be included. "They all love my potato salad - you have to add this recipe." She is right - no holiday was complete without her potato salad! She mailed me this recipe along with a corrected version of the "Booze Cake" recipe and the recipe for Kitchen Sink Cookies. She later followed up, asking if I needed more recipes, but by then the book was full.
