2 t butter
6 small green or yellow squash or zucchini, cut 1/4" thick
1/3 c red bell pepper, chopped
1 t Italian seasoning
1/2 t salt
1/4 t pepper
1/4 t garlic powder
4 eggs
1 c light cream or half and half
1 c shredded provolone cheese
2 T flour
1 T Romano cheese

Directions:
Directions:
Melt butter in large skillet. SautÚ zucchini, pepper and seasonings until vegetables are tender-crisp, about 5 minutes. Beat eggs until foamy. Stir in cream, provolone cheese and flour. Add vegetable mixture. Pour into well butter 1 1/2 qt rectangular baking pan. Sprinkle Romano cheese over top. Bake at 350║ until knife inserted in center comes out clean, about 40 minutes. Let stand 5 minutes before serving.
