#1 PREPARE PASTA |

#2 SAUTÉ SHRIMP |

Ingredients: |
Ingredients: 1 lb shrimp, peeled & deveined 1 Tbls Olive oil 1 Tbls Butter
Spices (a combination of something similar; could add fresh garlic): - sea salt - fresh ground black pepper - white pepper - chili powder - coriander - Colman’s mustard - green Tabasco

Directions:Wash & clean shrimp, pat dry with paper towels.
Heat 1 Tbls EVOO & 1 Tbls butter in large fry pan.
Sauté shrimp approx 2 minutes per side (slightly undercook) Sprinkle spices on both sides: sea salt, black pepper, white pepper, chili powder, coriander, Colman’s mustard, green Tabasco.
Remove Shrimp from pan and set aside. |

#3 ARTICHOKE HEARTS & SAUCE |

Ingredients: |
Ingredients: 1 can artichoke hearts, quartered lengthwise (not marinated) ¼ cup dry white wine (or substitute chicken broth)
1-2 Tbls Fresh lemon juice ~ ½ cup Light cream
⅛ - ¼ tsp nutmeg
1 Tbls Grated lemon peel
⅓ cup grated Romano, Parmesan, Asiago (preferably a mix of all 3)

Directions: |
Directions:Sauté quartered artichoke hearts in same pan with juices from shrimp.
Add 1-2 Tbls lemon juice & white wine/chicken broth and reduce.
Add approx ½ cup light cream and bring to light boil, then reduce heat and simmer until thickened and reduced (adjust quantity as needed to make sufficient sauce).
Add ⅛ - ¼ tsp Nutmeg, additional spices to taste.
Add approx 1 Tbls grated lemon peel & grated cheeses to taste;
Do not boil after adding cheeses or sauce will separate.

#4 FINAL TOUCHES |

Ingredients: ¼ tsp crushed red pepper Grated cheeses Parsley for garnish

Directions: |
Directions:Add cooked shrimp back into sauce with ¼ tsp crushed red pepper, heat thru.
Serve over pasta, sprinkled with additional grated cheese & fresh parsley. Mangia! |

Notes: Grated cheeses in a combination of Romano, Parmesan and Asiago is readily available and adds a great flavor, but I’m sure this would be very good with any of these cheeses alone. This meal is quick, easy, and delicioso!
