Ingredients: 1 LB crawfish or shrimp or ½ pound of each (whatever combination you like) ¾ C unsalted butter ½ C sliced baby bella mushrooms 1 large onion - chopped 3 cloves garlic - chopped ½ bell pepper - chopped 1 can roasted garlic cream of mushroom soup ½ C chicken stock (as needed) ¼ C diced tomatoes 6 green onions - chopped ¼ C chopped parsley ½ tsp granulated garlic ½ tsp granulated onion ½ tsp white pepper ½ tsp thyme 1 ½ T cajun seasoning salt and pepper to taste

Directions:º Spray large cast iron skillet with Pam. º Place skillet over medium heat º Add butter to melt. º Add the onion, bell pepper and mushrooms. Saute until onion is translucent. º Stir in the garlic and cook for a minute º If using raw shrimp add now and saute til pink º Stir in the soup and add a little chicken stock if needed º Stir in the diced tomatoes for a little creole color º Add the Crawfish and stir gently º Add seasonings º Simmer for 5 to 10 minutes over low heat until the crawfish is cooked through but not tough º Serve over hot cooked rice - or if doing Keto steamed Cauliflower |

Notes: I made this today as an experiment using Crawfish and Shrimp. I am on a Keto diet and it was so good with the Cauliflower and a cucumber, tomato and avocado salad with Olive garden dressing, that I decided I must write this up. I have made Etouffee only from a mix and I didn't have one, so I made up this recipe. Please try it and let me know what you think. with Love, Bev
