1 c. chopped red onions
1 c. chopped green bell pepper
1 c. chopped English cucumber
1 c. peeled and chopped tomatoes
1 1/2 tsp. chopped garlic
1 1/2 tsp. Kosher salt
1/4 tsp. cayenne
1/4 c. tomato paste
1 tbsp. white wine vinegar
1/4 c. plus 2 tbsp. olive oil
1 tbsp, lemon juice
3 c. tomato juice
1 sprig of thyme

In a large bowl, mix together the onions, green pepper, cucumber, tomatoes, garlic, salt, cayenne, tomato paste, vinegar, oil, lemon juice, tomato juice and thyme. Cover and refrigerate overnight. Remove the thyme and blend soup in a blender until smooth.
