4 green onions finely chopped
1 green pepper finely chopped
1/2 c. olive oil
1 c. rice
1 (15 oz.) can tomatoes cut up and drained
1 c. tomato juice
1. c. water
1 tsp. salt
1 tsp. oregano
chopped parsley

Directions:
Directions:
Saute onion and pepper in oil for about 3 min. Add rice. Cook stirring frequently until rice is lightly browned. Add tomatoes, juice, water and seasonings. Bring to a boil, cover and cook over low heat until the rice is tender and the liquid is absorbed, about 20 min. Sprinkle with parsley and serve.
