8 oz.lasagna noodles, pre-cooked such as Barilla works well.
2 c. tomato sauce
8 oz.mozzarella
15 oz. whole milk ricotta
2-4 oz. grated cheese

Directions:
Directions:
Take a 8 by 8 inch pyrex dish and layer the ingredients as follows: 1/2 c. tomato sauce, 2 noodles, 1/3 of mozzarella, 1/3 the ricotta, 1/3 mushrooms. Sprinkle with grated cheese. Make two more layers and finish with a layer of noodles, more tomato sauce and grated cheese. Bake it covered with foil at 350º about 45 min. till bubbling. Let it rest 15 minutes before slicing. Serve with additional sauce if desired.
Vegan option: Instead of cheeses, layer with sautéed vegetables such as eggplant, zucchini or mushrooms.
