2 medium sweet potatoes
1 tbsp. butter, softened
1/4 tsp. ground cinnamon
1/4 tsp. ground ginger
1/8 tsp. ground allspice
3 Granny Smith apples, peeled, cored and cut into 1/2" rings
2 tbsp. maple syrup

Directions:

Preheat oven to 350F.

Peel sweet potatoes and slice into 1/2" rounds.
Butter a small 3 quart casserole dish with half the butter or spray with cooking spray. In a bowl, stir together cinnamon, ginger and allspice. Arrange the apple rings and sweet potato rounds in alternating layers in the dish, drizzle with half the maple syrup and half the spice mixture. Layer in the rest of the apples and sweet potatoes, ending with the apples. Drizzle with the remaining syrup, sprinkle with the remaining spices, dot with the rest of the butter.
Cover and bake until the apples are very tender, about 45 minutes to one hour.
