1 cup plain Greek yogurt (Fage works well)
1 cup self-rising flour (you can make your own with regular flour - Google it!)

The easiest way to make these is to use a stand mixer with the dough hook, but you can certainly mix the two ingredients and knead by hand.

Put both ingredients in the stand mixer bowl and mix using the dough hook (make sure you strain any liquid from the yogurt before you put it in the bowl). You may have to stop the mixer and scrape down the sides a couple of times. Once the dough makes a ball stop the mixer so you don't overmix the dough. Remove the dough (it may be sticky) and put on a very lightly floured surface. Cut into 4 pieces. Take each piece and roll into a rope long enough to make a bagel-size circle when you connect the ends by pressing together. Place on parchment paper on a cookie sheet.

If you would like toppings, whisk 1 egg until thoroughly mixed and brush on the top of the bagels. Then sprinkle with Everything Spice (from Trader Joe's), sesame seeds, or poppy seeds.

Preheat oven to 350 and bake for 23-25 minutes.

NOTE: you can also make cinnamon raisin bagels by putting raisins in the dough towards the end of the mixing time. Then when you remove the dough, sprinkle with some cinnamon sugar and gently knead the dough a couple of times to mix the sugar in before you cut into quarters.
