20 mini sweet yellow & red peppers, seeded and sliced in half (in bags in produce section)
1 - 5.2 oz Boursin
3 oz Fresh Parmesan cheese grated
2 stalks of green onions finely chopped
1 tbsp. cilantro finely chopped
salsa for serving

Directions:
Directions:
Place the halved peppers on a greased baking sheet

In a small bowl, combine the Boursin cheese, parmesan, green onions and cilantro. Stir until smooth and evenly combined. Spoon the mixture into the sliced peppers.

Place the pan under the broiler and broil until just browned and heated through.

Serve alone or with salsa for dipping.
