1 pound ground beef
1 yellow or white onion- minced
2 cloves garlic- minced
1 cup of diced carrots
1/2 cup celery- diced
1 Tbsp olive oil
1 can cream of mushroom soup
1 cup milk (or more based on desired consistency)
1 can green beans
1/2 tsp paprika
1/2 bag frozen tator tots (or more)
1 cup cheddar cheese- shredded
salt and pepper to taste

Using olive oil, saute onion, garlic, carrots and celery until fork tender (start with carrots because they will take the longest). Remove from pan and use the same pan to brown ground beef. Use a mixing bowl to combine onion, garlic, carrots, celery with ground beef. Add the mushroom soup, milk, paprika and green beans- stir until combined. Add salt and pepper to taste. Spoon ingredients into an oiled or sprayed 9 x 11 baking dish. Top with tator tots then sprinkle cheddar cheese on top. Bake at 350 for 45 minutes or until the mixture starts to bubble and cheese is melted. Serve warm

Bob made his version of this for us when we were kids. I've made a couple variations but the basic premise is the same. Notably, one of our local newspapers ran an article a while back with recipes from the Montana State Prison and Correctional Institute in Deer Lodge- this was a prison favorite
