Cranberry Bread Recipe

Ingredients: 2 cups Chopped Cranberries (not dried) 1 ⅔ cups Sugar ⅔ cup Oil ½ cup Buttermilk (or milk soured with a little lemon juice) 2 Tbsp Orange Juice 4 eggs 3 cups Flour 4 tsp Baking Powder 1 tsp Salt 2 tsp Grated Orange Peel 2 tsp Vanilla ½ cup chopped pecans (optional)
Glaze: 1 cup confectioner's sugar and 1 Tbsp orange juice

Directions: |
Directions:Mix all wet ingredients then add flour, baking powder, and salt. Pour into 2 loaf pans and bake at 350º for about 50 minutes or until a toothpick comes out nearly clean (it's okay for a crumb to stick to the toothpick). Let bread cool well. Pour glaze on top.
I buy extra cranberries around Thanksgiving and freeze them to use throughout the year. You want to buy the whole cranberries in the fresh fruit section of the supermarket, not canned. |
