1 (18 1/2 ounce) box classic yellow cake mix
½ cup margarine
3 large eggs
1 teaspoon vanilla
8 ounces softened cream cheese
3 ½ cups confectioners' sugar

Directions:
Directions:
Melt margarine.
Mix 2 eggs and cake mix with margarine.
Pat into 9x13-inch pan.
Mix remaining egg, cream cheese, vanilla, and sugar until smooth
Pour over mix in pan.
Bake at 350°F for 30 – 40 minutes until center is done.
Remove from oven and sprinkle with powdered sugar.
Cut in squares and refrigerate until ready to serve.

Can use low fat cream cheese.

Try different variations for the crust. Add pecans and coconut.

Instead of margarine use butter. Instead of yellow cake mix, use lemon cake mix and add a bit of lemon zest to the cream cheese mixture.
