Ingredients:  
1 fryer, cut in quarters
a little olive oil
1 large onion, sliced
3 - 4 cloves of garlic, minced
1 tsp basil leaves
salt & pepper to taste
1/2 tsp oregano leaves
1 (4oz) can mushroom pieces (with juice)
1 (8oz) can tomato sauce
1 cup red wine

Cooked spaghetti

Directions:
Directions:
Skin chicken pieces, if desired, and brown in a little olive oil. Take chicken out of skillet and add onion and garlic and stir over medium heat for a few minutes. Put chicken back in skillet, sprinkle with seasonings and pour over the tomato sauce, wind and mushrooms with juice. Bring to a boil, then lower heat and cover. Simmer for about an hour. Serve over cooked spaghetti.

Can use breast or leg quarters if desired.
