Directions:I make these in my Kitchen Aid stand mixer, but you can use a large mixing bowl. Place flour in bowl, make a well. add eggs to well and work into flour until a stiff dough is formed. Do not overwork dough or noodles will be tough.
Place dough on a well floured surface and roll thin, adding flour as needed to keep dough from being sticky. Allow to dry while you are preparing the broth.
In large stock pot or soup pan, bring 4 quarts of chicken or turkey stock to boil, season with salt and pepper to taste. While stock is heating, cut noodles into 1/2" strips.. When is stock is boiling, start adding a few noodles at a time to the stock. DO NOT ADD ALL AT ONCE or they will clump together and won't cook properly. After all noodles are in the pot, allow to cook for 15 to 20 minutes until noodles are done. You will want plenty of broth because the noodles will absorb it as they sit. You can add cooked chicken or turkey if you want.
For Beef and Noodles, substitute beef stock for the chicken, and add cooked beef instead of chicken or turkey.
Some people season the noodle dough, but Grandma Little thought the flavor should be in the broth.

Notes: As a small child, I would stand on a chair beside Grandma while she made noodles and pies for family dinners. I got to help roll the dough and sometimes she would let me cut out different shapes of the noodle dough as "surprises" in the pot of noodles.
Extra pie dough I could roll out as I wanted and she would sprinkle it with cinnamon and sugar and bake as my special treat. Later, I had to make it into 3 pieces to share with Danny and Steve. Grandma had 4 boys. As the first grandchild and the only girl, she thought I was pretty special.
