Single Batch
1/3 C Shortening (Butter)

1/2 c sugar

2 eggs

1 3/4 c flour

1 tsp Baking Powder

1/2 tsp Baking Soda

1/2 tsp salt

3 mashed bananas

Double Batch
10 2/3 T shortening
1 c sugar
4 eggs
3 1/2 C flour
2 tsp Baking Powder
1 tsp Baking Soda
1 tsp salt
6 mashed bananas

Directions:
Directions:
Preheat oven to 350º

Mix wet ingredients with electric mixer

Sift dry ingredients together

Slowly add dry ingredients into wet ingredients. Keep mixer on low
Add slightly thawed bananas

lightly spray which ever pan you plan on using to cook the banana bread in.

stick a knife in the center. It is done if the knife comes out clean

9 1/2" x 5 " pan will cook 40-45 min.
Small loaf pan will cook 23-30 min.
Small Bundt stone 30-35 min.
Medium loaf stone 35-40 min.

I tend to put in only 1/2 required salt
Freeze over ripe bananas and they are perfect for this recipe.Just thaw slightly to squeeze them into the mixing bowl.
