1/4 cup green onion - sliced
1/2 cup red bell pepper - chopped small
1 Tbsp olive oil
1/4 cup red onion - chopped small
2 Tbsp milk
1/2 cup shredded cheddar cheese
5 eggs
1/2 cup ham - cut into small pieces

If you don't like ham, you can substitute mushrooms, sausage, bacon - the possibilities are endless!

1. Spray mini muffin pan generously with cooking spray. Preheat oven to 350.
2. Heat oil in skillet. Add ham, red pepper, and red onion.
3. cook until peppers and onion are tender.
4. In separate bowl, whisk together eggs, milk, green onions, and cheese.
5. Stir ham mixture into egg mixture.
6. Pour into greased muffin tin.
7. Bake for about 15 minutes or until golden brown.
