1 cup shredded cheddar cheese
1 cup shredded Monterrey Jack cheese
8 tortillas - enchilada size
1 lb ground beef
1 Tbsp taco seasoning
2 cups enchilada sauce
1 yellow onion - diced

Directions:
Directions:
1. Preheat oven to 350º.
2. Heat a large skillet over medium- high heat.
3. Add ground beef, onion, and taco seasoning; cook until meat is no longer pink.
4. Drain fat from beef and onion mixture.
5. Combine cheeses in a large bowl.
6. Pour 1/2 cup of enchilada sauce into bottom of baking dish.
7. Lay tortilla on flat surface and spoon beef mixture with 1/8 cup of cheese.
8. Roll up tortilla and place seam side down in baking dish.
9. Repeat with remaining tortillas.
10. Top with remaining enchilada sauce and cheese.
11. Bake for 15-20 minutes until heated through and cheese has melted.
