2 Large eggs
2 tablespoons flour
2 tablespoons Parmesan cheese, grated
½ cup milk
Salt, white pepper, nutmeg and chopped parsley according to taste
2 pounds pork tenderloin trimmed of all fat and silver skin
Flour to dredge
8 ounces butter
3 ounces lemon juice
Serve with Egg Noodles

Directions:

1. Blend ingredients through seasonings in blender at high speed for about 2 minutes to form a batter.
2. Slice tenderloin into ¼ to ½ inch thick pieces and pound into 3 inch thin medallions.
3. Dip each medallion in flour; then place in batter.
4. Melt enough butter to cover bottom of a large heavy frying pan.
5. Place medallions in pan so that they don’t touch each other.
6. Sauté until completely browned on one side; then loosen with a spatula and turn to cook the other side.
7. Remove to a serving tray and quickly deglaze frying pan with lemon juice.
8. Briefly reduce liquid to form a thick glaze.
9. Strain the glaze over the schnitzels and serve immediately.
Serve with Egg Noodles

Hands down my favorite family recipe. Always a classic and comfort meal. Makes a mess but the taste is worth it!
