½ cup butter
2 cups cooked pork, beef, veal, turkey or chicken
1 cup onion, diced
1 tsp. salt
pinch of pepper
1 can bean sprouts (well drained)
1 can Chinese mixed vegetables
2 cups celery, sliced
1 ½ cup hot water
Thickening:
2 Tbsp. water
2 Tbsp. cornstarch
1 Tbsp. soy sauce
1 tsp. sugar
Mix water, cornstarch, soy sauce, and sugar. Stir into chow mein mixture and cook until slightly thickened

Melt butter in hot skillet. Add onions, fry 3 minutes. Add celery, salt, pepper and hot water. Cover and cook 5 minutes. Add bean sprouts, mixed vegetables and meat. Mix thoroughly and cook 5 minutes.
Serve over Chinese noodles or rice.
