Ingredients: ½ cup ground flaxseed meal ½ cup almond flour 1 Tbs ground cinnamon 2 tsp baking powder ½ tsp salt ⅔ cup xylitol 4 eggs ½ cup coconut oil, melted and cooled

Directions:In a medium bowl, whisk together all dry ingredients. In a separate med. bowl whisk together the wet ingredients. Pour the wet into the dry and stir until combined. Grease a 6” cake pan well and pour mixture into the pan and cover with aluminum foil. Pour ½ cup of water into the inner pot and place the steam rack with handles in the pot. Place the cake pan on the rack and secure the lid. Press the manual or pressure cook button and adjust the time to 30 min. When the timer beeps, quick release pressure until float valve drops and then unlock lid. Carefully remove the pan and allow the bread to cool completely before flipping the pan upside down and removing the loaf. Slice and serve. |
