Chicken Parm Mac Recipe

1 (whole) boneless chicken breast
3 tbsps butter
3 tbsps flour
1 pkg (7oz) italian cheese blend
1 can (14 oz) diced tomatoes drained
1 lb ziti
2 cloves chopped garlic
2 cups of 2% milk
cup shredded parmesan
1 jar marinara sauce

cut chicken breasts into bite size pieces
saute in pan until cooked through
meanwhile- bring large pot of salted water to a boil, cook pasta and drain

heat oven to 425 melt butter in a medium saucepan over medium heat
add garlic and cook 1 minute
whisk flour and cook 1 minute
pour in milk, whisking ingredients together
bring to a simmer and cook 3 minutes
remove from heat and whisk in 1 cups of cheese and cup of parmesan

stir cheese sauce and tomatoes into pasta
fold in cooked chicken
pour into oven safe dish
top with marinara and remaining cheese and cup of parmesan
place in oven until cheese is lightly browned.

*If making ahead of time, take out dish about an hour prior to cooking. Place in 375 oven for approximately 45-60 minutes until cheese is lightly brown.
