1 lb thin asparagus
1/4 cup Parmesan cheese, grated
3 tbsp. butter, melted
2 tsp. olive oil
1½ tbsp. lemon juice
Pepper to taste

Directions:
Preheat oven to 350ºF.

Fill a 12 quart pot 2/3 full with cold water. Bring to a boil, add salt and oil. Blanch asparagus for 2 minutes. Rinse in cold water to stop the cooking. Drain well. Place the asparagus in an 8 x 8" glass baking dish and sprinkle with Parmesan cheese. Drizzle with lemon juice and melted butter and top with pepper. Bake in preheated oven for 5 to 7 minutes or until the cheese is melted.
