2-3 large handfuls of arugula (and some chopped Bibb lettuce if you want to add it)
¼ cup corn cut off the cob, or frozen sweet corn
½ package bacon or turkey bacon, cooked and chopped
1 avocado, chopped
15-20 grape tomatoes, halved
¼ cup crumbled Greek feta in brine (NOT the dry stuff! Costco and Trader Joe’s both have great feta in brine and it makes a huge difference)
3 Tsp. lime juice
2 Tsp. Olive oil
Fresh ground black pepper

Combine the first six ingredients in a large bowl. Add the lime juice, olive oil and pepper to a cocktail shaker (or any jar with an airtight lid) and shake until combined. Add the dressing to the salad bowl and toss all ingredients until combined.

I can live on this salad and nothing else for the entire summer. I never get tired of it. I like to make it in a giant bowl and eat it all myself, though the recipe makes enough to share. Fresh corn is best, but Birds Eye Super Sweet Corn works really well too and is less hassle. Just no dry feta crumbles... yuck!
