Directions:Slice the fruit very thin, removing the seeds. Leave the rind on the fruit. Add the fruit to a quart measuring cup and measure the fruit, and then add it to a large soup pot. Add water that equal to 3 times the amount of the fruit (for example, if there are 3 cups of fruit, add 9 cups of water) Mix the fruit and water, cover, and let stand overnight. In the morning, put into a soup pot and bring mixture to a boil and boil for 2 minutes. Let stand overnight. Repeat the process of bringing to a boil and boiling for 2 minutes. Measure the mixture in a quart measuring cup again and add ¾ cup sugar per pint (1 pint = 2 cups) of fruit and juice. Return to the soup pot and simmer 15 - 20 minutes. Stir occasionally so it doesn't burn. To test for "doneness", take a small plate, put it in the freezer. Drop a spoonful of the fruit mixture on the plate and let it sit for 30 seconds. Then tilt the plate. If it runs easily, it is not ready. The mixture should be the consistency of a soft gel and will move slightly but will not run. |
