2 cups of lentils ( I prefer red lentils )
1 large brown onion
2 carrots
3 small sweet peppers
1 cup of peas
2 tins of chopped tomatoes
3 crushed garlic cloves
2 tsp of mixed herbs
Fresh basil
1 tbsp of tomato paste
1 tsp of smoked paprika

Rinse the lentils under cold water then add to a sauce pan bring to boil and leave to simmer for 20 minutes. Whilst the lentils are cooking chop up the onion, carrots and peppers add to a large frying pan with the crushed garlic, fry until the onions start to soften. Add the tomato paste and mix to cover the vegetables. Then add the cooked drained lentils and all the other ingredients leave to simmer on a low heat for 30 minutes. Then enjoy on top of your favourite pasta and some garlic bread.
