1 Cup rice
6 Cups water
1/2 Cup sugar (or less to taste) plus 2 tsp.
3 Eggs, divided
1/3 Cup milk
1 Can evaporated milk
Raisins, optional
Cinnamon for garnish

Directions:
Directions:
Bring water, sugar and rice to a boil. Add 3 egg yolks, 1 tsp sugar and milk. Let boil until rice tastes done. Add 1 can of evaporated milk and raisins. Beat the 3 egg whites & 1 tsp. sugar until fluffy. Put over rice. Sprinkle cinnamon over the top.

Serve warm or chilled.
