1 bunch broccoli
1 lb flank steak or boneless sirloin
1 egg white
1 tbsp. water chestnut powder or cornstarch
3 tbsp. medium dry sherry
cup oyster sauce
1 tsp.sugar
2 cups sesame oil (lesser)
2 tsp. minced fresh ginger root (optional)
cup thinly sliced scallion
2 medium garlic cloves, minced

1. Cut beef into inch slices
2. Add 1 tbsp. sherry, egg white, cornstarch.
3. Marinate in 2 tbsp. sherry and cup oyster sauce and 1 tsp sugar for 24 hours.
4. Cut broccoli into pieces and blanche until tender.
5. saute meat in sesame oil until tender. Set aside.
6. Leave oil in pan.
7. Saute garlic, ginger and scallion in oil.
8. Add broccoli and meat.
9. To make sauce, use cup oyster sauce, 2 tbsp. sherry and 1 tsp sugar. Pour over and mix.
