Casserole
3 cups sweet potatoes, peeled and cubed, preboiled and mashed
¾ cups white sugar
2 eggs, beaten
½ cup butter/margarine, melted
¾ cup milk
¼ tsp ground nutmeg
½ tsp ground cinnamon
*optional, not usually used 2 cups miniature marshmallows


Topping
¾ cups crushed cornflakes cereal
½ cup packed brown sugar
½ cup chopped pecans
¼ stick butter, melted

Directions:
Directions:
1. Preheat oven to 400 degrees F (200 degrees C). Prepare a 9x13 inch baking dish with butter.
2. In a large bowl, mash the sweet potatoes.
3. Mix together with sugar, eggs, butter, milk, nutmeg, and cinnamon
4. Scoop the mixture into the baking dish.
5. Bake 20 minutes in the preheated oven, or until sweet potatoes are tender.
6. In a small bowl, mix the crushed cornflakes, brown sugar, pecans and remaining butter and marshmallows. Spread the topping over the baked casserole.
7. Return the casserole to the 400 degrees F (200 degrees C) oven and bake an additional 10 minutes.
