1 c, sugar
2 tbsp. flour
2 ½ tsp. salt
1 ¾ c. pineapple juice (can use from crushed pineapple)
2 beaten eggs
2 tbsp. lemon juice
Acini-de-Pepe pasta
3 qts. water
Cooking oil
3 - 11 oz. cans drained Mandarin oranges
1 - 20 oz. crushed pineapple
1 - 9 oz. cool whipped topping
2 c. miniature marshmallows
1 c. coconut
Directions:
Directions:
Mix sugar, flour, ½ tsp. salt and pineapple juice together along with the 2 beaten eggs. Cook until thick. Then add 2 tbsp. lemon juice when cool. Cook 1 pkg Acini-de-Pepi macaroni in 3 qts. water, 1 tbsp cooking oil, 2 tbsp salt. Follow cooking directions on macaroni package. When cooked drain, rise, and cool. Combine macaroni and cooked mixture. Set overnight in refrigerator.

Before serving add drained Mandarin oranges, crushed pineapple, cool whip, miniature marshmallows and coconut.
