4-6 whole wheat flour tortillas, 9", cut into quarters
19 ounce can of sweet potatoes, drained
1 can of black beans, rinsed and drained
1 small jar of chunky salsa
2 teaspoons chili powder
14 ounce can of tomato sauce
1 cup grated cheddar cheese
1 ripe large avocado, diced
¼ cup chopped green onion
½ cup sour cream

Directions:
Directions:
Preheat oven to 450ºF.

Arrange half of tortilla pieces in the bottom of a greased 13" x 9" casserole dish. Mash sweet potatoes in a medium bowl and add black beans, half of the salsa, and chili powder. Spread evenly over tortillas in baking dish. Arrange remaining tortilla pieces of top. Combine tomato sauce and the other half of the salsa in a small bowl. Pour evenly over tortillas.

Bake, uncovered, for 15 minutes. Sprinkle with cheese, bake for another 5 minutes until cheese is melted.

Serve with avocado, green onion, and sour cream on top.
