¼ cup cold water
1 tbsp unflavored gelatin
1 cup white granulated sugar
4 eggs (separating the yolk and whites)
¼ cup lime juice (however many limes it take to make ¼ cup)
Grated lime rind of at least one lime
Pinch of salt
Pie shell
Whipping cream

Directions:
Directions:
1. Put gelatin water to soak – squeeze limes and grate lime rind into juice
2. Beat egg whites until stiff adding a ½ cup sugar – set aside
3. In top of a double boiler over boiling water combine beaten egg yolks, ½ cup sugar, lime juice and salt – stir
constantly until mixture thickens to custard consistency
4. Add softened gelatin and water – remove from heat and cautiously fold in beaten egg whites – pour into pie shell
and put in refrigerator for 20 to 30 min – top with whipped cream before serving
