4 tablespoons of butter ~ plant based works too
4 lbs of yellow onions ~ about 6 large onions or 8 medium sized onions (chopped or sliced)
1 teaspoon of sea salt
1/2 teaspoon of ground black pepper
1 tablespoon of flour
32 ounces of beef stock
14 ounces of chicken stock
1/2 teaspoon of thyme - fresh sprig is best
2 tablespoons of beef base
1 cup of red wine (or whatever you have open)

1 baguette, sliced
Gruyere or Provolone cheese

Directions:
In a large stock pot over medium-high heat melt the butter and add the onions. Add salt, pepper and thyme to the onions (more or less depending on how flavorful you want your soup). Saute the onions for about 20-30 minutes, or until they're soft and golden brown (caramelized). Add the flour and stir to coat the onions. Continue to cook for about a minute until it smells like pie crust. Pour in the wine (if you haven't drank it yet) and stir; the alcohol will cook off in a few minutes. Add in the beef stock, chicken stock and the beef base. Reduce the heat to a low temperature and simmer for 20-30 minutes; stirring occasionally and season to taste with additional salt and/or pepper.

When you're ready to eat, preheat the broiler (oven or toaster oven). Arrange the baguette slices on a baking sheet in a single layer. Sprinkle the slices with the cheese and broil until bubbly and golden brown, 3-5 minutes.

Ladle the soup into bowls, top each bowl with a slice of the melted cheese baguette and enjoy!
