1 1/2 cups fresh or frozen pineapple
1/2 red bell pepper
1/2 onion
1 Tbsp ginger
1 garlic clove
2 Tbsp soy sauce or to taste
2 cups cooked white rice (cold)
1 tsp sesame oil (optional but highly recommended)
Garnish:
2 Tbsp green onions
1 Tbsp sesame seeds (optional)

Directions:
Directions:
Prep vegetables before you begin. Cut pineapple into chunks, dice onions and bell peppers, grate giner and press garlic.

Heat oil in a heavy bottom skillet.
Add onion and cook for a minute or until soft.
Add garlic and giner and saute another minute, stirring constantly.
Increase heat to med/high and add bell pepper and pineapple.
Continue to saute for another 3-5 minutes until golden, stirring frequently.
Add 2 cups cooked rice and 2Tbsp soy sauce or to taste.
Continue to stir over heat for another minute or until soy sauce is well blended.
Turn off heat and stir in 1 tsp sesame oil, or to taste
Sprinkle with green onions and sesame seeds, if desired.
