Cookies:
⅔ cup of shortening
¾ cup of sugar
1 egg
½ cup of orange juice
2 tbsp grated orange rind
2 cups of flour
½ tsp baking powder
½ tsp baking soda
½ tsp salt

Icing:
2 cups sifted powdered sugar
2 tbsp butter
1 tsp orange rind
2 tsp orange juice

Cookies:
Set oven to 400 º
Mix shortening, sugar, and egg, then stir in juice and rind. In a separate bowl measure flour and blend dry ingredients. Stir in shortening mixture.
Drop 2" apart on un-greased cookie sheet for 8 to 10 minutes.

Icing:
Combine powdered sugar and butter, then slowly stir in rind and juice until smooth.
