3 cups all purpose flour
⅓ cup sugar
2½ tsp baking powder
½ tsp baking soda
¾ tsp salt
1½ sticks cold butter
1 cup buttermilk

Directions:
1. Preheat oven to 400 degrees. Combine flour, sugar, baking powder, soda and salt in mixing bowl. Cut chilled butter into
pats and beat into flour mixture with electric mixer until texture of coarse meal. Blend in buttermilk. Divide dough in
thirds.
2. If desired, flavor the dough three ways
Orange zest scones: Add 1 tsp orange zest to ⅓ of dough recipe
Cheddar cheese scones: Add ¼ cup grated cheddar cheese to ⅓ of dough recipe
Cinnamon Raisin Scones: Add ¼ cup raisins, ½ teaspoon sugar and ¼ teaspoon cinnamon to ⅓ of dough recipe
3. On a lightly floured surface, pat each of the three mixtures into circles 7 inches in diameter. Cut each dough circle into
four wedges with knife. Bake wedges on lightly greased baking sheet for 12 minutes or until lightly browned on bottom.

Note to make plain scones, simply skip step 2. To make the scones all one flavor, simply add the same flavoring three times, once to each portion of dough.
