1 tbs. butter
1 onion, sliced
6 c. vegetable broth
5 broccoli florets
3 potatoes, peeled, chopped
tsp. salt
tsp. pepper
1 c. frozen peas, thawed
2 tbsp. heavy cream
Optional:
chopped toasted almonds
chopped fresh parsley

Directions:
Directions:
In pot, melt butter over medium heat; add onion and cook until slightly softened, about 5 min.
Add broth, broccoli, potatoes, salt and pepper; bring to a boil. Cover and reduce heat to low.
Cook until tender, about 20 min.
Stir in peas; cook 1 min. Let cool slightly.

In blender, in batches, puree soup. Return to pot; reheat if necessary.
Serve drizzled with cream and, if desired, sprinkle with almonds, parsley and additional peppers.
