4 Phillips Crab Cakes
2 English muffins
4 slices baked ham, heated
4 eggs, fried, yokes still runny
1 pkg. Hollandaise sauce
4 slices tomato (optional)
Old Bay

Directions:
Directions:
Thaw and cook crab cakes according to package directions. Slice English muffins in half and toast. Prepare Hollandaise sauce according to package directions. On top of each muffin, layer one slice of ham, one crab cake, one egg and spoon Hollandaise sauce over top. Sprinkle with Old Bay. Add a gently fried tomato between the crab cake and egg if you like.

COVID restrictions imposed by our enlightened leaders, who somehow allowed us to go to the ABC store but prevented us from going to Church. This necessitated us to live-stream De Chantal's Sunday Mass on our phone. Our pastor, Father Giese was the frequent celebrant. I called it "The Father Giese Show," brought to you by "God!" After Mass I would try to impress my best girl with a brunch she'd remember. This recipe achieved that! But I threw away the crab cake and sauce packaging before she saw it, so I could take all the credit.

Note: When back in Montgomery County I buy my crab cakes at O'Donnell's Market in Potomac. The best crab cakes in town.
