Ingredients: 1 lb. Ground Beef 1 10oz can cream of mushroom soup 1 10oz can cream of chicken soup 1 small can diced green chilies (or jalapenos if you need the heat!) 1 small white onion; diced Shredded cheese or Velveeta slices Corn tortilla chips for a crust

Directions:Preheat oven to 350º Spray a 8x8 oven safe baking dish or disposable foil pan with cooking spray. Layer the bottom of this pan with corn tortilla chips; crush slightly to form a crust.

In a large skillet, brown the hamburger with the diced or rough chopped white onion and season with salt and pepper to your liking. Drain if desired.
Add in cream of mushroom and cream of chicken soup; stir to incorporate. Add in diced green chilies; stir to incorporate.
Heat to bubbling.
Pour hamburger mixture over the chips in the oven safe dish. Bake for 30 minutes at least. Top with shredded or Velveeta cheese before serving.

The can be a 'make ahead' meal to be frozen and stored if needed. Do all the steps except baking in the oven and topping with cheese. Save that for the day of! Cover tightly with foil. Thaw over night before placing in the oven for heating. Heat for 45 minutes or until hot. Top with cheese an serve!
